Earth, Wind, & Foeder (Foeder-Fermented Lager | 5.2% ABV)
Earth, Wind, & Foeder is a beautifully patient lager brewed with Belgian and German pilsner malt, Czech hops, and German lager yeast. It ferments in an oak foeder for six weeks before an additional two months of lagering, allowing the delicate malt sweetness, floral hop character, and subtle oak influence to meld into an exceptionally crisp, refined, and highly drinkable lager.
Ship of Fools (Mixed-Fermentation Wild Saison | 5.8% ABV)
A collaboration between Prison City Brewing and Strangebird Brewing, Ship of Fools is a spontaneously fermented wild ale that spent a night in a coolship before aging for 15 months in neutral wine barrels and an oak foeder. The result is a beautifully layered beer with rustic farmhouse character, bright acidity, earthy funk, and a refreshing, mouthwatering tart finish that showcases the complexity of mixed fermentation.
Summer Tomato Sandwich
Sometimes the simplest meals are the ones we look forward to all year. This sandwich starts with locally made stretch bread—a Central New York favorite known for its chewy crust and soft interior.
we suggest layering it with the fire-roasted red pepper mayonnaise, fresh basil, and thick slices of juicy beefsteak tomato. We searched for local tomatoes, but Mother Nature had other plans this week, so we chose the best ripe beefsteaks we could find rather than compromise on flavor.
It's a celebration of summer's classic flavors, proving that when the ingredients are this good, less truly is more.
