WEEK #3 — LET’S TAILGATE!
Football season is officially here, and this week we packed your CSA box for one of our favorite fall traditions: TAILGATING.
Whether you're headed to a game, watching from the couch, or gathering a few friends around the fire, most of the work is already done for you. This week's box is loaded with PCB-made game-day favorites — Buffalo Chicken Wing Dip, Chili, Mac & Cheese, Garlic Herb Butter, farm-grown peppers, carrots and celery, blue cheese and corn chips — plus Silver Street Kettle Corn, a PCB koozie and, most importantly, beer.

THIS WEEK'S BEER: FAULTY PLAN
Faulty Plan is a collaboration IPA brewed by Prison City Brewing + Ever Grain Brewing Co. of Camp Hill, Pennsylvania.
Because sometimes the best beers start with a plan — and sometimes they start when the plan goes a little sideways.
This collab brings two breweries together for a fresh, hop-forward IPA made for exactly the kind of afternoon this box was built around: friends, food, football and a cold beer in your hand.
Your box includes a 4-pack of Faulty Plan, so put that PCB koozie to work.
BUILD YOUR GAME-DAY SPREAD
We've done most of this one for you. Heat up the Buffalo Chicken Wing Dip and serve it with the carrots, celery and corn chips. Crumble or spoon some of the blue cheese over the top if you're a true Buffalo believer.
Warm the chili low and slow and set out bowls with whatever toppings you have around the house — cheese, sour cream, scallions, hot sauce, chopped peppers or crushed corn chips.
Heat the Mac & Cheese as-is, or turn it into loaded tailgate mac with some of the ideas below.
And don't overlook that Garlic Herb Butter. It's one of those little jars that can turn into five different things before the weekend is over.
THREE EASY RECIPES FROM THIS WEEK'S BOX
LOADED CHILI MAC
This may be the easiest tailgate dinner ever.
You'll need:
PCB Mac & Cheese
PCB Chili
PCB Farm Peppers
Blue Cheese, optional
Corn Chips
Heat the mac & cheese and chili separately. Spoon mac & cheese into bowls and top generously with hot chili. Add finely chopped farm peppers and a little blue cheese if you like it. Crush a handful of corn chips over the top for crunch.
CSA tip: Make individual portions in oven-safe ramekins, top with cheese and chopped peppers, and bake until bubbly.
GARLIC-HERB BUTTER GAME-DAY PEPPERS
You'll need:
PCB Farm Peppers
PCB Garlic Herb Butter
Salt & pepper
Optional: blue cheese
Slice the peppers in half or into thick strips. Melt a generous spoonful of garlic herb butter in a skillet and sauté the peppers until softened and slightly blistered.
Finish with salt and pepper. For a richer version, crumble a little blue cheese over the warm peppers just before serving.
They're great alongside the chili and mac, piled onto a sandwich or burger, or eaten straight from the pan.
BUFFALO CHICKEN MAC & CHEESE
This one turns two things from your box into one ridiculously easy dinner.
You'll need:
PCB Mac & Cheese
PCB Buffalo Chicken Wing Dip
Blue Cheese
Farm Peppers, optional
Heat the mac & cheese and Buffalo chicken dip. Stir a few generous spoonfuls of Buffalo dip into the mac until it's as Buffalo-y as you want it.
Transfer to a baking dish, crumble blue cheese over the top and add a few thinly sliced peppers. Bake at 375°F for about 15–20 minutes, until hot and bubbling.
Serve with celery and carrots on the side.
DON'T FORGET THE KETTLE CORN
Save the Silver Street Kettle Corn for the second half — although we're making absolutely no promises that it will last that long.
Sweet, salty, crunchy and local. No recipe required.
THE EASIEST TAILGATE PLAN
Put the chili in a slow cooker. Warm the Buffalo dip. Heat the mac & cheese. Chop the veggies. Open the corn chips. Put the kettle corn in a bowl.
Crack a Faulty Plan. Put it in your new PCB koozie.
Your work here is done.
