A saison is a traditional Belgian-style ale that's light-bodied, dry, highly carbonated, and refreshing, with flavors of citrus, pepper, herbs, and subtle fruit from the yeast. Despite its complexity, it's incredibly drinkable and designed to quench your thirst.
It's called a farmhouse ale because it was originally brewed on farms in southern Belgium (Wallonia) during the cooler months. Farmers would brew it in the winter and let it mature until summer, when it was served to the saisonniers—the seasonal farm workers helping with the harvest. The beer was intentionally refreshing, lower in alcohol than many modern versions, and made with whatever local grains, herbs, and hops the farm had available, giving each farmhouse its own unique recipe.
