PCB Farmhouse Fall CSA – Week 4

SOUP SEASON!

There's something about October that makes us want to slow down, pull on a cozy sweater, light a candle, and put a pot of soup on the stove.

This week, we're celebrating one of our favorite fall traditions: SOUP SEASON!

We've done some of the cooking for you with three comforting soups, a rustic loaf of bread, and all the makings of a fresh farmhouse salad. Add a 4-pack of Saison d'Automne, a warm mug of pumpkin tea, and you've got yourself a pretty perfect fall evening.

Three Soups, Three Cozy Fall Meals

These soups are from our friends at Pika’s Farm Table

Pika's Farm Table, Belgian inspired meals made in the Hudson Valley - it seamed souper (pun intended) fitting to pair their soups to our Belgian style saison beer.

1. Tuscan White Bean & Kale soup – vegan & gluten free

Serving suggestion: Turn this soup into a substantial oven dish by adding bacon and sausage. For the vegetarians among us, there are many tasty meat alternatives - Fry the thickly sliced meat in a skillet - put in oven dish - pour the Tuscan White Bean soup on top and make sure to fully cover the meat. Put in a 350F oven for 40 minutes. Et Voila, you have a French style cassoulet dish.

2. Cream of Broccoli & Potato – gluten free

Make it a meal: Turn your rustic bread into garlic herb bread (especially if you have some of the butter from last week left) Cut into strips for dipping!

Make it your own: Top your soup with shredded cheddar, crispy bacon, fresh chives, or oyster crackers for a little crunch.

Dinner idea: Cream of Broccoli & Potato Soup + garlic bread Dippers + farmhouse chopped salad

3. Butternut Squash & Roasted Apple – vegan & gluten free

Make it a meal: Pair with a toasted ham, apple, and cheddar sandwich or a simple autumn salad.

Make it your own: Add toasted pumpkin seeds, a swirl of cream, a little cinnamon, fresh sage, or a few drops of maple syrup.

Dinner idea: Butternut Squash & Roasted Apple Soup + Apple & Cheddar Toasts + Simple salad

Recipes From This Week's Box

Farmhouse Chopped Salad with Poppyseed Dressing

Ingredients

  • PCB Farm lettuce

  • Cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 carrot, shredded

  • Thinly sliced red onion

  • Fresh herbs, chopped

  • PCB Kitchen poppyseed dressing

Directions

  1. Wash and dry the lettuce, then chop into bite-sized pieces.

  2. Add tomatoes, cucumber, shredded carrot, and red onion.

  3. Sprinkle with chopped fresh herbs.

  4. Toss with the poppyseed dressing just before serving.

Optional additions: Sliced apples, toasted pecans, dried cranberries, crumbled goat cheese, or grilled chicken.

Farmhouse tip: Chop everything ahead of time and store separately. You'll have an easy salad ready for several meals.

Rustic Garlic & Herb Bread

Ingredients

  • Rustic bread from your box

  • 3 tablespoons softened butter

  • 1 garlic clove, minced

  • 1 tablespoon chopped fresh herbs

  • Pinch of salt

  • Optional Parmesan cheese

Directions

  1. Preheat oven to 375°F.

  2. Mix softened butter, garlic, herbs, and salt.

  3. Slice bread and spread generously with herb butter.

  4. Sprinkle with Parmesan if desired.

  5. Bake 8–12 minutes until warm and lightly golden.

Perfect alongside all three soups!

Beer Spotlight: Saison d'Automne

Prison City Brewing | 4-Pack

Autumn is a wonderful time to enjoy a saison. This traditional Belgian farmhouse beer style is known for its lively carbonation, dry finish, and expressive yeast character, which can bring notes of pepper, fruit, and spice.

Saisons are especially food-friendly, making them a natural addition to this week's farmhouse-inspired box.

A little beer education: Saison means "season" in French. The style is historically associated with farmhouse brewing in Wallonia, the French-speaking region of Belgium. While saisons vary widely today, their rustic roots make them especially fitting for harvest season.

entertaining: Make a Soup Night of It

One of the nicest things about fall is that entertaining doesn't have to be complicated.

Invite a couple of friends over, warm up your three soups, slice the bread, toss together a big salad, and call it dinner.

A few ideas to make it special:

  • Serve the soups in smaller bowls or shot glasses so everyone can sample all three.

  • Put out toppings like grated cheese, fresh herbs, oyster crackers, and toasted seeds.

  • Set the table with pumpkins, candles, and a few clippings from the garden.

  • Pour a round of Saison d'Automne.

  • Finish the evening with pumpkin tea in your new Prison City camp mugs.

No elaborate cooking, no fancy menu, and very little cleanup. Just good food and good company.
