oKTOBERFEST IN A BOX

Prost! Welcome to Week #2 of our Fall Farmhouse CSA!

This week we’re celebrating one of our favorite fall traditions with Oktoberfest in a Box — a collection of sausages, pierogies, pretzels, kraut, mustard, fresh farm produce and, naturally, a 4-pack of PCB Oktoberfest. We even tucked in an Oktoberfest stein so you can do it properly! Marc & I were lucky enough to attend Oktoberfest in Munich last year & loved it!

MAKE AN OKTOBERFEST FEAST

You have two sausages in your box: the brown sausage is the Bratwurst, and the other is Polish sausage.

To cook your sausages: Heat a skillet over medium heat with a little oil or butter. Brown the sausages on all sides, then add about ½ cup of your PCB Oktoberfest (water works, too), cover and reduce the heat. Simmer gently until cooked through. Remove the lid and let them brown for another minute or two before serving.

Warm your PCB Kitchen Sauerkraut and Red Cabbage and serve alongside the sausages with plenty of PCB Ale Mustard and that big Bavarian pretzel. Dinner is practically done!

SAUERKRAUT PIEROGIES

Your pierogies come from the Pierogie Guy in Rochester and are filled with sauerkraut. For an easy preparation, boil gently until heated through, then transfer to a skillet with butter and sauté until golden brown on both sides.

Try them topped with sautéed onions, chopped herbs or garlic chives — and definitely a little mustard on the side. The box also includes fresh radishes and eggs from the PCB Henitentiary, which can find their way into breakfast, a salad or another meal later in the week.

ABOUT PCB OKTOBERFEST

Crack open your PCB Oktoberfest, pour it into your new stein and raise a glass to fall.

Oktoberfest/Märzen beers are traditionally malt-forward lagers, made to be smooth, crisp and exceptionally food-friendly. Look for toasty, bready and lightly caramelized malt flavors with a clean lager finish — pretty much the ideal beer for bratwurst, mustard, pretzels, kraut and pierogies.

Try this: Take a bite of bratwurst with kraut and ale mustard, followed by a sip of Oktoberfest. There’s a reason beer and sausage have been friends for a very long time.

FROM THE PCB FARM

Fresh Herb Bundle — Use your herbs for cooking throughout the week, or turn them into a simple fall simmer pot. Add the herbs to a saucepan of water and toss in any apple or citrus peels, cinnamon sticks or whole spices you have around. Keep it at a very low simmer, adding water as needed, and let your kitchen smell like fall.

Late-Fall Strawberries! — This is one of the treats of growing hydroponically: we're still growing strawberries on the PCB Farm in late fall! When most of the traditional strawberry season is long behind us, getting fresh, locally grown berries feels pretty special. Eat them right out of the box, add them to breakfast, or enjoy them as a simple dessert after your Oktoberfest feast.
