WELCOME TO THE PCB FARMHOUSE FALL CSA — WEEK #1
Adirondack Weekend
We may be saying goodbye to summer, but this is one of our favorite times on the farm. The tomatoes and peppers are still coming in, the herbs are beautiful, and cooler nights have us craving all the good things that come with fall.
So we're kicking off the season with a little trip north — Adirondack style.
This week's box is made for an easy ADK-inspired happy hour or picnic: local cheese, jerky, maple onion bacon jam, crackers and a 4-pack of Riot in the ADK, along with a PCB Farmhouse Market Bag to carry it all. Then we've loaded you up with plenty from the farm — strawberries, cherry tomatoes, peppers, mixed lettuce, basil, rosemary, parsley, cilantro, garlic chives, flowers and nasturtiums — plus Maple Vinaigrette from the PCB Kitchen.
Our suggestion: pack the cheese, jerky, jam, crackers and a couple Riots in your new market bag, find a fire pit or a favorite spot outside, and call it dinner.
RECIPES + IDEAS FOR THIS WEEK'S BOX
Adirondack Harvest Salad
Uses: lettuce, strawberries, cherry tomatoes, peppers, herbs, flowers + Maple Vinaigrette
Ingredients
PCB mixed lettuce
Handful of strawberries, sliced
Cherry tomatoes, halved
1 pepper, thinly sliced
ADK cheese, crumbled or cubed
Chopped basil and/or parsley
Nasturtium petals or edible flowers
PCB Maple Vinaigrette
Crackers, roughly crushed
Directions
Pile the lettuce onto a platter and top with strawberries, tomatoes, peppers, cheese and herbs. Drizzle generously with Maple Vinaigrette. Finish with crushed crackers for crunch and scatter edible flowers over the top.
Make it dinner: Add grilled chicken, steak or sliced ADK jerky.
Maple Bacon Jam + ADK Cheese Crostini
Uses: cheese, maple onion bacon jam, herbs
This barely qualifies as a recipe — which is exactly why we love it.
Ingredients
Sliced baguette or crackers
ADK cheese
ADK Maple Onion Bacon Jam
Fresh rosemary or garlic chives
Directions
Toast baguette slices until crisp. Top each with cheese and a small spoonful of Maple Onion Bacon Jam. Finish with finely chopped rosemary or garlic chives.
For a sweet-savory version, tuck a thin strawberry slice under the jam.
Beer pairing: Riot in the ADK.
Farmhouse Cherry Tomato & Pepper Bruschetta
Uses: tomatoes, peppers, basil, garlic chives, parsley
Ingredients
2 cups cherry tomatoes, quartered
1 pepper, finely diced
2 tablespoons chopped basil
1 tablespoon chopped garlic chives
Small handful parsley, chopped
1–2 tablespoons olive oil
Splash of balsamic or red wine vinegar
Salt + black pepper
Toasted bread
Directions
Combine tomatoes, pepper and herbs. Add olive oil, a splash of vinegar and plenty of salt and pepper. Let sit for 15–20 minutes so all those tomato juices mingle.
Spoon over toasted bread. Add shaved or crumbled ADK cheese if you'd like.
Strawberry-Basil Riot Spritz
Here's a fun way to use a few berries and some of that basil alongside the
Riot in the ADK 4-pack included in the share:
Ingredients
2 strawberries
2 basil leaves
½ oz lemon juice
½ oz simple syrup or maple syrup
Riot in the ADK
Ice
Directions
Gently muddle strawberries, basil, lemon and syrup in the bottom of a glass. Fill with ice and slowly top with Riot in the ADK. Give it one gentle stir and garnish with a strawberry and basil leaf.
5-Minute Farmhouse Herb Sauce
Uses up a LOT of those herbs
Ingredients
1 cup mixed parsley, basil and cilantro
2 tablespoons chopped garlic chives
½ cup olive oil
2 tablespoons red wine vinegar or lemon juice
Salt + pepper
Optional: pinch of red pepper flakes
Directions
Finely chop everything by hand or pulse briefly in a food processor. Stir in olive oil and vinegar and season to taste.
Keep it in the refrigerator and spoon it over grilled chicken, steak, fish, roasted potatoes, eggs, tomatoes or crusty bread throughout the week.
DON'T FORGET THE NASTURTIUMS
Both the flowers and leaves are edible and have a fresh, peppery flavor. Tear them into salads, scatter the petals over your bruschetta, tuck them onto a cheese board, or use a whole flower to garnish a Riot. They're one of the easiest ways to make an ordinary plate look like it came straight from the Farmhouse garden.
