Beer Marinated Olives

Ingredients

  • Olives (consider a mix of Castelvetrano and Kalamata for varied textures and flavors), olive variety suggested by The Cozy Apron, or your favorites.

  • Good quality olive oil.

  • Fresh rosemary and thyme.

  • Large garlic cloves, smashed.

  • Lemon or orange peel. [ours had lemon peel]

  • Pinch of red pepper flakes.

  • Sea salt.

  • Beer (choose a light or less hoppy beer that complements the other flavors without overpowering them). we used sam adams lager.

  1. Instructions

    1. Drain the olives but don't rinse off all the brine to retain some tanginess.

    2. Gently warm the olive oil with the fresh herbs, smashed garlic, and lemon or orange peel to infuse the oil with their flavors.

    3. Combine the infused olive oil (along with the herbs and aromatics) and the olives in a bowl.

    4. Allow the olives to marinate at room temperature for several hours or up to 48 hours for optimal flavor development. If not serving within that timeframe, refrigerate them and bring them to room temperature before serving.


Honey Mustard Beer Butter

1/2 pound room softened butter

1/4 cup dijon

3 T local honey

4 oz beer [we used crispy boys for this]
